The experience unfolds in four moments — understand, cook, share and unwind — designed so you take home a new way of seeing Mediterranean cooking.
Reserve Your Place1. Mediterranean Food Foundations
We start with the territory: Km0 produce, local Valencian farmers, l'Albufera, and the principles of anti-inflammatory eating. You understand why this cuisine is one of the most complete longevity diets in the world.

2. Live Show Cooking with Cristina Ruiz
Cristina prepares each dish in front of the group with seasonal produce from the garden, and then participants cook their own portions alongside her — applying the same technique with her live guidance. She walks through technique, ingredients, and the nutritional logic behind every step.

3. Shared Tasting Table
We sit together to taste, talk, and explore how to recreate the dishes at home with whatever your local season provides. You leave with practical knowledge, not a recipe list.

4. After Lunch: Unwind at the Farm
Once we've eaten, you're welcome to stay: wander the garden, rest in the shade, and — in season — take a dip in our pool. The perfect way to close the day, far from the pace of Valencia.

At EkkoFarm we cook with organic ingredients. What doesn't come from our own garden we source from a network of nearby organic producers keeping the Valencian huerta alive:
- Organic vegetables and herbs from our own garden at EkkoFarm.
- Local organic farmers in Camp de Túria.
- Km0 producers from the Valencia huerta.
- Rice and produce from the l'Albufera area.
- Organic olive oil, pulses and grains.
L'Albufera is not just one of Europe's most important wetland ecosystems — it is one of the historical foundations of Mediterranean food culture. Cooking with what this landscape produces, in season, creates food that is naturally anti-inflammatory, antioxidant-rich, and supportive of gut health.

Whole-grain rice rolls filled with spinach, fresh herbs, wakame and a touch of strawberry
